-1 (14 ounce) can of diced fire roasted tomatoes with juice (or one 4.25 oz jar)

-1 teaspoon cumin powder

-1/4 teaspoon chili powder

-12 ounces of cream cheese, cubed (or 2/3 cup sour cream)

Additional ingredients:

-salt and pepper to taste

To prepare: In a large pot or stockpot, combine the bell peppers and onions. Cook on medium high heat for 3 minutes. Add in the chicken breasts and cook until they are browned. You will want to stir occasionally so they don’t stick to the bottom of the pan. Once they are browned, add in the garlic and cook for 1 minute more. Pour in the chicken broth and bring it up to a boil. Once boiling, reduce heat to simmer for 20 minutes stirring occasionally adding salt and pepper as you go along. After 20 minutes remove from heat and allow to cool for 5 minutes before transferring into a blender or food processor. Blend till smooth then transfer back into the pot or stockpot. Stir in canned tomatoes with juice, cumin, chili powder, cream cheese cubes (or sour cream)
