To prepare: In a large pot or stockpot, combine the bell peppers and onions. Cook on medium high heat for 3 minutes. Add in the chicken breasts and cook until they are browned. Pour in the chicken broth and bring it up to a boil. Once boiling, reduce heat to simmer for 20 minutes stirring occasionally adding salt and pepper as you go along. After 20 minutes remove from heat and allow to cool for 5 minutes before transferring into a blender or food processor. Blend till smooth then transfer back into the pot or stockpot.
